South Tyrol DOC Sauvignon Blanc “Marie Chérie”
Sauvignon Blanc Marie chérie is made exclusively from grapes from the business’ own vineyard.
This is situated in Plars di Mezzo in Lagundo, near Merano and at 500 m above sea level, on stony soil.
Its southeast-facing location, and the fresh breeze at night, which blows down from the glaciers of the Ötz valley visible in the distance, ensure that the grapes are optimally ripened and that all the aromas are preserved.
The grapes, which are grown according to the organic method with Bioland/Abcert certification, are usually harvested by hand at the end of September, when they are fully ripened.
After the harvest, the grapes are brought to the winery at Juval Castle, where they are made into wine, depending on the particularities of the vintage.
The must acquired through gentle pressing rests on the skins for some time, to allow the wine to develop a stronger structure and improved aromas.
The juice is then separated from the skins and the must is poured into a stainless-steel container to be fermented, so that the original characteristics of the variety remain unchanged as far as possible.
After fermentation at a controlled temperature, the wine then remains on its own yeast until shortly before it is bottled, which normally occurs in the June of the year following the harvest.

Description:
The location and the soil give the wine a complex, elegant aroma.
This Sauvignon Blanc, typical for the variety, has a fine, rich nose, with intense notes of blackcurrants and elderflowers, and also spices and flint.
It is full and smooth on the palate, with a fresh taste and spicy, aromatic and mineral notes. A lasting flavour and completely harmonious finish.
Grappa Sauvignon Blanc “Marie Chérie”
Grappa Sauvignon Blanc Marie chérie is made exclusively from the pomace of grapes from the business’ own vineyard, which are grown according to the organic method with Bioland/Abcert certification.
The vineyard is situated in Plars di Mezzo in Lagundo, near Merano and at 500 m above sea level, on stony soil.
The pomace is processed entirely in the Aurich family’s distillery at Juval Castle, using double distillation in a bain-marie.
To dilute the final distillate for the alcohol content intended for consumption, only pure water from the Juval source is used.
After the improvement of the grappa, which can last up to two years, it is bottled without any additives.
The completely pure, rich and elegant aroma and the smoothness of Grappa Sauvignon Blanc Marie chérie portray the perfect synthesis of the natural raw ingredients and the expert distillation.
Grappa Marie chérie should be enjoyed at room temperature so that its fineness and aroma can develop fully.
The grappa is only produced in limited quantities.
